Fresh Figs, Goats Cheese and Prosciutto

Published on 13 February 2012

The season for these sensuous and sweet fruit is not only very short but perfectly timed for Valentines Day! Their silky skin soft texture and subtle sweetness makes them the perfect aphrodisiacal fruit.

  • Serves: 4
  • Prep time: 10 minutes

Ingredients

6 fresh figs
150g goat cheese
8 thin slices Prosciutto
4 large pieces Lavash
Picked fresh oregano (optional)
Olive oil and reduced Balsamic to drizzle

Method

1. Split 4 of the figs into quarters from the tip down but not all the way through and cut the remaining to 2 figs in half. Place 1 ½ figs in the centre of each plate (pinch in the bottom of the quartered fig will help it splay out)
2. Drizzle liberally with the Balsamic reduction.
3. Gather the two slices of prosciutto around the figs like a nest. Divide the goat’s cheese into four and break into pieces over the salad.
4. Drizzle liberally with olive oil and use the ingredients to stand up the piece of Lavash.

To Serve

Decorate with picked fresh oregano (or you could use 3-4 loose leaves of rocket)
